The staff do not wear masks or any other protective clothing of note.
Incidentally, note the behavior changes induced by the virus. Particularly the man's inability to swallow water. The virus has taken control of parts of the man's autonomous nervous system. The stuff that controls our reflexes, breathing, digestion, etc. Since the virus spreads through saliva in bites and coughs, the virus tends to concentrate in the mouth. If the infected animal, the man in this case, were to swallow water, then the virus would be washed away to the stomach and severely depleted in the mouth. Obviously this is counter productive to the virus's ability to spread and infect others, which is basically its sole purpose in life. So the virus induces hydrophobia, and causes the throat and chest muscles to repeatedly contract when swallowing is attempted.
There is a whole host of particularly gruesome and nasty shit that various viruses and microorganisms can do that will alter the behavior of their host, aimed at helping the disease spread.
