As you can see, since we measured a different observable than energy (more generally, an observable which does not commute with $H$ ), the time evolution results a nontrivial superposition after the first measurement collapse. This is why when someone says measurement, it is of utmost importance to specify *which observable* is being measured.

Also, note that the stuff with the position measurement is not strictly correct, because $X$ does not actually have eigenvectors, and $|\Psi(x)|^2$ is not a probability, but rather a probability distribution. This is why I absolutely hate how QM is introduced through position operators etc., because infinite-dimensional quantum mechanics requires so much more mathematical sophistication than finite-dimensional systems.
