Personally the newest and easiest to watch series is the new Blue Jacket Lupin set in Italy. It's really good and has a few BJS specific characters.
But Castle of Cagliostro (the Miyazaki movie and Proto Ghibli film) is a great place to start. As are both the anime series (red and green jacket ignore pink jacket it's garbage)
But yeah, you can't really go wrong, i'll depend on what you're into and are looking for from the series some are pure comedy some are action heavy some are dark and brutal when it comes to the special tv movies and OVAs.
Operation: Return the Treasure! is good because it's Lupin using his skills to return shit someone else already stole, so he's essentially stealing fakes and leaving the originals in their place and getting chased by the police.
Episode 0 is a good place to start as it's A origin story for the crew (note it's not 'canon' lupin doesn't have one, but it introduces the characters)
Lupin is very much worth watching. I've not seen a lot of the seasons, but the tv specials/movies/OVAs are really good. If you want to watch a show go with Blue Jacket though, and see if it catches you. If you don't like Blue Jacket, try some Red Jacket episodes. If you haven't got time to invest in a series pick an OVA/TVM/Movie.
All I'd say is avoid Green VS Red till you're more familiar with the series, as it's PURE fan service in terms of continuity and references and nods to the series. So you'll miss a lot!
