First, Stormbreaker is akin to a solid state battery, fusing the two parts doesn't generate electicity.

Second, Eitri is used to working with a full crew. He would have people working on the handle, while he does the forging. Now, he has to do all the work alone. Ofcourse things get fucked.

It's a clear callback to the orginal story of Mjölnirs forging where Loki, in order to win his bet against Eitri, changes into a Hornet and stings his brother who is working the forge in the eye so he was to wipe away the blood, thus interupting the forging proces.
When the hammer is completed the handle was only a fraction of its intended length

The only reason he didn't cameo in Thor 3 was because Taika decided to save him for a later film. His planned cameo was too insignificant so they decided not to use it.
