Can someone explain how we know temperatures from 1000 years ago?

I'm not trying to troll, I legit don't understand.

So supposedly temps have spiked hard in the last 70 years or so, compared to the last 2000.

But how do we even know what the temperature was like 2000 years ago?

Various things like ice core samples, tree rings and other such methods can be used to figure out the temperature.

From ice, which also shows that higher temperatures causes the release of CO2, rather than the opposite. This makes sense, since in warmer water the minerals that trap CO2 dissolve and less CO2 can stay dissolved in the water.

The interglacial warming was 10000 years ago. We should be slowly cooling, not rapidly warming on top of the interglacial warming.
