Imho the best definition is that it's number studies. The study of numbers.
Math covers lots of stuff that's just about numbers, and it also covers things that involve using numbers in model making.

Mathematics is first and foremost a language, but it is a very special one. As all languages it can represent certain aspects of cognition. Languages usually also have the ability to be used constructively, that is, we can construct syntax that did not initially represent any cognition. When we read this back, we potentially get novel cognition. Mathematics has properties that makes this easier than almost any other language. Gonna disagree there.
Mathematics uses technical terminology, but this technical terminology is a tool to succinctly convey things about numbers and other objects (the common feature of which is that they can be referred to using numbers, or at least aspects of them can).
Mathematical notation is not mathematics as a whole, just as the English language is not literature as a whole.

I think you have a point, but in my view the special thing about mathematics is that this is still closer to the truth than in the case for English language vs. literature.
