Why did women evolutionary evolve to have breasts? Aren't breasts less optimal and less ergonomical than udders? Why don't women have udders then?

Then they wouldn't be udders. If you referring to a similar form cows have (large gland with multiple nipples) I doubt they would be as beneficial as the usual pair of breasts for the reason I just said before: it's easier for the human eyes to appreciate. One breast for each eye to look at.
