If the sun set behind the disk- then there would be darkness all over it.
If the sun 'flew out of view' and only illuminated a part of the disk, then you would never see it set.
Both of these can only happen on a spherical Earth
So, as far as simple experiments go: watch the sunset, then call someone who lives in a different country to confirm that the sun is still shining for them (just in case all of internet is an illuminati conspiracy, because you could always just watch a stream from another country and see the daytime sun for yourself)
