I'm looking for literature cataloguing the name of poses in art, or talking about the process.

For instance, what is the pose being assumed by Michael in this painting called? Is there a particular name for martial poses used in painting through the eras?

I don't know if they have any names, but alot of old art is drawn in a very theatre like way. Poses and expressions are artificial to better communicate the story.

Most old art depicts either biblical scenes, mythological scenes, historical scenes, or rich people. If you learn about these things, you'll understand the picture, which will let you better understand the choices in the posing, which.. if any sort of catalogue doesn't exist, you can form it yourself

I hadn't considered the connection to theatre, though that does make sense. Poses with spears are easy enough to decipher, as spears and staffs can be used in a similar way in pose as tools to assist in oration, but swords are more difficult.

I know, for instance, the pointing and pose of the finger often has meanings of certainty in one's destiny, like in pic related. It's closely related to the orator's hand symbol of benediction.

Any attempt at cataloguing it would have been after it was already established, by people who do not have deep cultivation in it. It's best to just draw from the sources and even from what they have studied. A lot of the poses are derived from classical imagery.
