I swear I saw a commentary where they changed cartman's family to a single mother and a spoiled only child to round out the representation with the other three guys. Stan is normal/nuclear family, Kyle is upper middle class/unspoiled single child, and Kenny is poor.

I think I remember hearing that Matt and Trey stopped using Mephisto because they no longer found the character funny. I guess it also makes sense that they no longer use him because he was originally a parody of a Marlon Brando character that was from a recent movie at the time but nobody remembers nowadays.
