The first thing you need to know is she was a super villain for a long time. If you want to read her at her most evil, read the Firestar mini, it's pretty good. She had a rival school of mutants and competed with Xavier, who had the new mutants. She was a member of the Hellfire Club.
Roughly, she was evil from 1980 to the late 80s. Morally Grey from the late 80s to 1994. And a hero from 1994 when she was the leader of Generation X (a book that lasted 7 years) until last year when Marvel decided to make her a villain again.
Many people never liked her because she used to be pretty evil, and because she broke a marriage, the marriage between Jean and Scott, imagine if there were an important character who broke the marriage between Reed Richards and Sue Storm, and then was in comics as the girlfriend of Reed for 10 years.
Morrison's New X-Men is the most obvious recommendation, she may even have been the main character and his self insert in that comic.
Whedon's Astonishing X-Men is another obvious recommendation, although not everybody likes it.
Gillen's Uncanny X-Men was one of the last very good X-Men books, she was there in the extinction team, and she would be later in the Phoenix 5 in Avengers vs X-Men.
