See, if you say "Ich bin Amerikaner", you are implying an "ein". You are an American. For the sake of this example.
Now if you are saying that you are not an American, you have to refer to that noun as opposed to an adjective.
So, if you deny being fast, you say: "Ich bin nicht schnell."
But if you deny being any noun, say, a sofa: "Ich bin kein Sofa."
Or, in the initial example: "Ich bin kein Amerikaner."
