Neither did Greg really when he first met them.
And Vidalia clearly knows Amethyst is "a rock, right?"
The humans in the show so far, even those that just get introduced to the Gems, don't find their existence that shocking. They seem to have a pretty high tolerance for these things even outside of Beach City.
So the teacher and class all overreacting here is just out of place.

Peridot is small and weak, but she had her enhancers to facilitate that with shit like running up a wall instead of jumping.
Likewise, an important gem like Sapphire never had a reason or option to fuse, but she was fully capable of doing so.
Also, gems seem to have specific powers that may or may not be learnable. Ruby's heat, sapphire's ice, Rose's everything all seem personal. But then you have Pearl, who's supposed to be basically a doll, being able to control sand and clouds for some reason. So that's a bit more confusing.
