She conquered Ba Sing Se in a manner that avoided fighting and brutal deaths, or sieges and starvation.
She captured Suki and her team alive instead of killing them. Aiming to capture instead of kill and dealing with prisoners of war isn't that easy. I think they were on Earth Kingdom soil at the time too? Azula must've gone through a lot of trouble to keep them alive and unharmed while they were captured.
She saved Zuko's life as a kid, and eventually she got him back to the Fire Nation and gave him a new opportunity instead of just imprisoning him.
She was a soldier, but so were a lot of good people. All of the main cast ended up joining the war and fighting in it.
Iroh's opinion was that Azula couldn't be saved, but Iroh is merely a human and he isn't infallible. There have been moments where he was wrong about something.
At what point did Azula do something that made her impossible to redeem, in your opinion?
Azula's among my least favorite characters. But I'm playing the devil's advocate here, since I felt that there were multiple scenes where she had the opportunity to do something terrible yet didn't. Most of the time, the worst thing she does is playing cruel and sadistic mindgames. I think it's a part of her character. Maybe she could be redeemed under the right circumstances, but a redeemed Azula would probably be a boring Azula.
