Sociopathic humans that forgo their morals when they need them most do exist as an outlier (and they are a major problem due to where their machiavellian traits get them), but you'll find even the most agreeable gem doesn't have any morals at all. They barely even understand the concept of morality, and they only start to learn when they come to rising to the level of human perception, rather than gem perception, thanks to Steven bridging the gap for them. They're a very hedonistic race, basically they all just do what makes them feel good, or what they feel like doing until they eventually, entirely thanks to humanity, learn that they don't need to be that way, and they're capable of chanign. Lucky for the diamonds, it's very easy to program them into doing whatever a diamond expects of them and enjoy it. And I say that as someone that loves the gems, because despite being soulless creatures, they're not hopeless. They have a lot of very interesting and good traits, and they are capable of changing.
By the way the diamonds aren't reformed and they don't understand any of Steven's grievances, they're playing nice because they love Steven.
Though it's also worth stating that just as there exists an outlier of basically bad gems, an outlier of basically good gems also exists. Gems born of Earth seem to understand concepts like freedom and honor, despite the rest of the race not really getting it, the closest thing to honor for the average gem is obedience or usefulness. Spinels also seem to be such an exception, since their universal truth is love, above anything else.
