So why do people complain about Korra having 1920s aesthetics? If anything the technology should be more advanced. It's clear that technology level in ATLA is similar to at least very late 19th century real world. They had tanks, trains, airships, gigantic drill trains etc.

Nobody really complained about the steampunk aesthetics. They complained about the futuristic giant mech in the finale. Also the modern looking forklift in the comics for the original series and the Azula in a modern wheelchair. Those were the big things.

I wouldn't say that.
Also the giant drill train.
I think it's more a case of "Simpsons has celebrity cameos and on the nose pop culture references" which they always did, just typically with different tact and the general stories and comedy were far better but since those things are harder to actually describe/figure out how they work they blame the surrounding material. So really the issue is Korra is an all around worse show with inferior show but it's a lot of smaller more subjective and/or subtle things that are hard to break down as easily as "They fucked the worldbuilding with stupid eva mechs"

In the original show the technology didn't compromise the very explicit eastern fantasy setting they were drawing from, and it's merely the same kind of trope you'd find elsewhere with big bad empires having advanced or more cohesive mechanization. Korra comes along and in 70 years they've got mass commercial transport, radios, printing press, etc. all so New Yoik and funny man go nyaahyasee on the radio. It was said by someone else in another thread but if Bryke wanted consistency they could have easily looked up the actual cultures of Asia having to historically adapt to westernization/industrialization.

The Fire Nation's industrialization and disregard for nature in general (like how they started hunting down and killing the dragons for no reason other than showing off their bending prowess) was also one of the bigger proxies for their villainy

Korra glosses this entire, very important part of the original series' worldbuilding over to the point that Korra HELPING ASAMI FUCKING DEAL ARMS during the ACTUAL CIVIL WAR BETWEEN THE WATER TRIBES, the EXACT TYPE OF CONFLICT THAT THE AVATAR IS SUPPOSED TO PREVENT barely even merits a second glance. Varrick, who is the exact kind of mustacho-twirling industrialist who could've made for a MotW Fire Nation villain in the original series, is consistently depicted as a loveable goof and his crimes as wacky antics

I find EXTREMELY unlikely that given the presence of bending and material proof of the existence of spirits and other supernatural forces, the world of Avatar would develop in such a neat 1:1 fashion to ours that they even have a thinly-disguised Henry Ford equivalent. Of course, none of this matters because Korra retcons the entire nature of the spirit world (and bending, for that matter)

if the air nomads are vegetarians (I mean obviously nobody can be vegetarian without modern bacteria-farming techniques to get the missing nutrients, but you know, "vegetarian"), how the FUCK was there a fat one in Sozin's flashback? They made shit like fruit pies, not to mention an ability to travel far and wide to find "vegetarian" treats. It's possible that he ate tons of fruit pies and could travel to places that cooked everything in deep oils and salts even non-meats. Then just sat around all day being wise.

It isn't the technology that's the problem, it's the culture.
ATLA is based on Asian cultures whereas Korra is a lot more western. Republic City is basically early-mid 20th century New York City. In terms of values Korra is also a lot closer to 20th century western liberalism than any kind of Asian philosophy (and I mean liberalism, not leftism or progressivism).

Because it not only spoiled the setting, but if you want to get into the nitty gritty theres a lot of inconsistencies relative to the size of the avatar world and the lack of economic/militaristic reasons as well as lack of resources to develop high carbon steel and industrialization on the scale seen in republic city. Fire Nation steam technology in aatla was rudimentary at best other than the giant drill they constructed or their air ships made with technology stolen from the new air nomads, many of their machines only worked incredibly well due to mastery of fire bending giving the operator a great deal of control.

Generally though Korra really flopped with the world-building following the War, in my opinion.
I definitely think a better idea for a show would have been simply following Aang's journey following the War, maybe a year or two later.
In fact here's my pitch: It's been a few years, and Aang has spent the whole time searching for living Airbenders. We get to see one of his latest trips. He's growing more and more depressed. Zuko's back at the capital, trying to assert political control, while Katara and Toph are in Ba Sing Se doing shit or something. Sokka is traveling back and forth from Ba Sing Se to the Northern and Southern Water Tribes, becoming a major political leader. All of his friends, and especially Katara, wish Aang could just learn to accept that his people are dead.
Sokka hears that Aang's on some islands near the Northern Continent and gets over there quickly. He talks with Aang and convinces him to let him accompany him on one more journey before Aang gives up. They follow some cool leads, with Sokka's detective instincts coming in handy, and eventually travel over the ocean to uncharted territory, getting blown further off course by a storm. (By the way this would be assuming that the normal map we see is basically a half map and the other half is most ocean and unknown.)

At the same time we see the stuff the rest of the gang is up to, with way-better versions of shit the comics did. In the end Aang and Sokka come to a Hawaii/Pacific-like archipelago inhabited by Polynesian Waterbenders. The Waterbenders eventually tell them of having legends of flying people who used to live nearby but stopped a century ago. Aang and Sokka investigate and find a small colony of Airbenders whoa re extremely paranoid. It was a small monastery that ended up sheltering a few hundred refugees a century ago, but their fear of the Fire Nation lead them to never leaving. They instead dug down and, into the mountain and under the sea. Aang is overjoyed to discover them but he needs to convince them to stop being afraid and come back out to the world. The issue is that they've stopped Airbending for some dumb superstitious reason. Can Aang teach a thousand-something people how to Airbend and resettle?
Or something like that. I get that it's an asspull for the Airbenders to just come back like that but it would have been a welcome one and well-deserved for the long-suffering Aang. Not to mention leagues better than the BULLSHIT that Korra played.
Anyway I also just want to see more adaptions of eastern cultures in the world. Fire benders have Japs and Aztecs (Although the Aztecs should really have been more than one small island), Water Nation have Eskimos and Cajuns, Earth kingdom had Chinese groups, and presumably Indians or something (The guru?) while the Air nomads were basically just Tibetans. Would be nice to see more.
