And we're talking seriously big: like 7 feet tall and 500 pounds. A behemoth of a woman, with big muscles and big hips and a belly in the middle. Someone who looks like she could crush your skull with a single hand.
My reasons for this are twofold. First, every other master earthbender we see in ATLA are behemoths. Think of Xin Fu and the Boulder. Think of Fire Nation Fred and Big Fat Hippo. Hell, even Bumi, in his old age, is something of a mountain of a man. Apart from Toph, every master earthbender is a giant and also pretty thick as well. It would make a certain amount of sense if Toph grew into such a person.
Now, as
>>125304694 notes, Toph's appearance is built on irony. She's the most powerful earthbender in the show, yet she's a little slip of a girl. AND she's blind. Irony is built into her character design. But if that's the case for her childhood character design, why shouldn't it be the case for her adult character design as well? And what would be more ironic than the smallest member of the Gaang growing up to be the biggest, in both height and weight? From someone who was shorter than any other member of the group to someone who could probably carry the rest of them on her shoulders.
You can imagine a reunion of the Gaang years down the line where Sokka is chilling out, having some food, when all of a sudden he hears Toph's voice over his shoulder. He turns and gazes up and up and up until he FINALLY sees her face. He's amazed, and then Toph lets out a big chuckle. Then she claps him so hard on the bicep that he almost is knocked off his feet. Then she just grins and says, "I had a growth spurt!"
