1, The Episodic format aka All the buildup for nothing
In the first season it was a perfect fit to have mostly independent slice of life episodes while we got occasional dips into the ancient evil awakens storyline. Rapunzel was under supervision after all and she didn't really know her powers. But after raising the stakes in the ending of S1 they basically reset everything. Outside the dedicated foreshadowing moments or episodes the main storyline almost doesn't exist. They did this in S3 too. It has the least amount of episodes yet wastes time on pointless fillers.
2, The story falls apart
The more we get to know about the main story the worse it gets. Significant plotlines are abandoned and important characters get brushed off after seasons(!) of buildup. The "huge" twist on the end of S2 doesn't pay off at all in S3.
