Part of this is definitely because Adam Muto seems to have a stubborn belief that the audience can't see anything of Finn in the future (except for Obsidian, I guess?) so if they had Finn being completely different to show that other events had happened and changed him that would be breaking that tenant and informing the audience of what he went through.
I understand the desire to want to let the audience's imagination wander with a character's eventual fate, but like you said in a situation like this it does make Finn feel static. I think the thing about Finn acting younger because magical death bullshit and he looked/felt young again, but that is just a convenient excuse really.
It does feel like so much more could be done but Muto wants to cut down on showing what Finn/Jake's life is like after the finale, so that's a bummer. It's weird to want to do a sort of episode like this but not even reveal things as basic as, did Finn have a family? Did he ever marry? Is he sad about anyone else having lost him since he fucking died, instead of instantly thinking about Jake?
