Contrasting him, Jagganoth does something Meti warns about in her writings - he clings to victory. That's why he gladly accepted Metatron's feathers, since they made it impossible for him to be defeated. But victory and defeat are ultimately hollow concepts, a step between your will and reality that's fundamentally just a fabrication.
So, yes, Zoss wouldn't be able to defeat Jagganoth. Nobody and nothing can, because Metatron, who is the voice of YISUN, the instrument of the greatest art of lying of the greatest liar in existence and nonexistence, willed it so. But 'not being able to be defeated' and 'being able to shape reality how you want' are not the same thing. Zoss would simply not give a fuck about Jagganoth and break the wheel on his own terms anyway, and Jagg would be able to do nothing but seethe and rage at an opponent who doesn't care to face him in the first place.
Incidentally, this is also why I place Meti at the same or almost the same level as Zoss. Not because any power level answers Abbadon has given about her, but because she's mastered the art of Cutting, which is essentially Royalty in an extremely crystallized form ('Royalty is a continuous cutting motion' and all that) and seems to loathe having done so.
Both her and Zoss have achieved everything there is to achieve and realized that the very concepts of Royalty and the Art of Cutting are limiting, so they both sought to shatter those as well, Zoss through Allison and Meti through Maya. They have remarkable similarities, and I'm personally very excited to see where Maya's story goes, since it seems that like Allison she's very much not quite reached the level of understanding of her master yet.
