It's also, like you said, that the mind fills in the gaps and midtakes that some animators make, which draws a closer comparison to reality, meaning that the animator has to really be quite good for it to work. This is all to say that it isn't usually attempted because audiences have gotten used to it, and it requires a large investment of money to use as a selling point, unlike the chase for higher and higher resolutions.
