I'm actually more curious about Nancy. While she eventually falls back in love with Dale after a night at a romantic restaurant, why did she stay with him in the time between then and when she had Joseph, who was of course actually a product of her affair with John?

It can't be money. Dale notes he doesn't make a living wage and Nancy is the family's provider. Dale didn't even regularly sleep in the same room, and she obviously didn't view Dale as a sexual object (they only had sex on his birthday). What was Nancy getting out of their relationship at all?

Dale was a good father to Joseph and seems to be the one who spent time actually taking care of him, albeit in a totally insane fashion given Dale is off his fucking nut.
So, she was using him like a nanny service I guess?
Or it was just social, didn't want to make herself a pariah. Nancy was supposed to have been popular in school and is obsessed with self-image, but that doesn't hold much water since everyone knows about her relationship with Redcorn EXCEPT her husband and son.

She clearly loved dale once so she might never have worked up the courage to break his heart, to his face at least.

Probably concerned about redcorn being a stable father figure for joseph and also about his promiscuity

Joseph. Nancy loved her son, and if the affair came to light and they got divorced Dale would definitely get custody considering the affair was 100% Nancy's fault.
Also it's a small conservative town. While the affair was on a "don't ask don't tell" kind of deal, Nancy could get by fine, but if the affair came to light Nancy would have a hard time living in Arlen.

Still has her career as a TV personality. While her friends and neighbors already knew about the affair, hers was a public face. Her being outed as a divorcee who got divorced over a bastard love-child and affair would make her pretty hard to sell as a positive face for a small town news programme.

Why didn't Nancy and Redcorn just orchestrate Dale's "accidental" demise? He was a known basketcase and based on that one episode with the clocktower Arlen's police would gladly kill him.

Redcorn always operated under the assumption that Nancy would eventually leave Dale and Joseph would become his son.

Nancy is the worst person in KotH. As she deeply hurt Redcorn after years of stringing him along. She also cheated on Dale fora decade and a half and continues to deceive him about Jospeh and the affair.

Aside from his obvious insanity and constant bullshit stories about being a soldier of fortune and what not, Dale actually seems pretty intelligent. He just puts it toward pursuing insane conspiracy theories. His knowledge of governmental procedure is damn phenomenal though. Is he just blinded by crazy to not see the obvious, or is he just in deep denial?
