Look at Thor - he's (arguably) a totally different person in Thor 1 and Ragnarok, but there's still an effort there to be true to the core of the character if not specific storylines or moments.
I mean, going back to iron man, yeah, he's pretty accurate in some ways, but we've been getting to know him for twelve years. Spider-man has been around for about five years, and on top of that, the MCU is still stuck avoiding everything sony did in two different trilogies.
