Change as a theme for SUF and the movie primarily shows up as a change in approach. Steven fighting Jasper instead of talking. Steven letting Amethyst take control of an issue. The CG's accepting Steven as a teenager and not a child. Etc.
Steven becoming a monster thus serves the themes in two ways: he deflects and represses his feelings about Pink and lets his rage take over which quite obviously isn't healthy, so he needs to learn how to properly let her go and move on.
And since MonsterSteven is a creature of unbridled rage and pain, he will have to be handled differently than past antagonists. Most likely by Jasper imo, fighting him down to get his attention and then talking sense into him from her perspective.
