Like, a lot faster, this is due to production pipelines being able to easily be spread across multiple resources. Notably, texturing and modeling can be done at the same time, obviously not something you can do with the physical object, it has to be there before you can paint it and give it the right texture, but with CGI models you can share the load. Likewise you can also texture and rig at the same time, as in give it the ability to move and react, while its colors are being painted, and usually once you have the final model down its not hard to fix, not like real puppets where if something goes wrong it takes time on set and out of set to fix. Obviously one looks more real and the actors can mess with it, but the other is just 'act out the scene' and then jam it in there, they can be preparing the model long before and long after the shooting is done. But, of course, the hardware and talent needed to do this, and to do it quickly they all have to work at the same time, is considerable and costly.
TLDR Practical is cheaper but CGI faster is the short of it.
