One of the points they've driven home over the season is how important its success is to their survival. At best they'd be trying to get someone else to watch over it, and at worst it would be left completely unattended. Hop Pop has the added factor of making sure that nothing uncovers the music box, which could happen if someone decided to go rooting around and noticed a conspicuous patch of worked dirt.
If anyone goes with her, my bet is on Sprig (and possibly Polly, but not without a struggle). He's young, can theoretically provide for himself as food and water go, and has the best chance of actually keeping up with Anne. Having Hop Pop and/or Polly stay would keep a window into what's going on in Wartwood open.
