The original trilogy wasn't great because of the setting, it was great because it was an interesting opera with likable characters and a satisfying arc. Everything in 4-6 was tailored to the events of the movie and the arc of Luke and Vader.
Taking the background details and the setting and trying to shove other lesser stories in doesn't work because the universe was never more than utilitarian. George Lucas isn't George Martin or Tolkien or even Gygax, he didn't have a fleshed out world with politics and economics and the groundwork from which countless other stories could spring.
That's why any Star Wars property besides those three movies that's any good throws a bunch of shit out the window and invents a whole bunch more.
