So Zuko was never supposed to kick Azula (or Ozai's) ass. That's why, when Azula loses, Zuko doesn't mock her. He looks miserable, disgusted, and horrified. He was always supposed to triumph by being a kinder, better person. Zuko "wins" when he sacrifices his life for a foreigner and a peasant, something Azula would never do. As such, Katara is literally willing to do whatever it takes to save Zuko. Zuko's goodness means that he will never stand alone. He will always have people like his mom, Iroh, Aang, Katara, Sokka, Suki, and Toph to help him. Azula will never have anyone.
By contrast, Katara kicking Azula's ass to save Zuko makes sense. Katara's character is set up as one who is underprivileged (inb4 Tumblr). Katara goes from being a peasant from a society hostile to women. She goes up against a rich, powerful, beautiful princess from a country where sex has never been a inhibitor. Katara triumphing over Azula sends the message that hard work and effort will compensate for a lack of social advantage.
It also fits Katara's story because, out of all of the main cast, Katara was the most jaded and bitter about the damage the Fire Nation caused the world. Aang is a pacifist, Toph never really lost anyone, Suki gets over her village being burned down with a quip, and Sokka didn't want to pursue his mom's killer. Katara, on the other hand, had a real fucking bloodlust. She's a surprisingly dark character at times. The fact that Katara can go from having such fear and resentment for Fire Nation people to literally saving the (future) Fire Lord's life completes her arc and ties into the story's themes of forgiveness.
