People are BORED and TIRED of the same "elegant" art student disney trash. People want stuff that's rough around the edges, people want stuff that has more effort put into it than necessary. People want stuff that looks INTERESTING, and guess what, most of the audience doesn't give a shit about this ivory tower character design garbage that only exists to make artists into cogs to fit into a machine.
You want my honest opinion, b8 aside? I don't like Hazbin Hotel, I think its sophomoric, juvenile, and poorly made. I think Vivzie is a child and probably runs the production like shit. It also has artistic integrity that's actually noticeable in the current animation landscape, people respond to it positively because its honest and you can tell they actually put more effort into it instead of going down the safe route of making everything easy to animate and cheap for a production line (which at the end of the day, is what most art courses try to instill, not what will make for the most high quality artistic work). Its popular in the same way the early Image comics were, its technically pretty trashy, but the sheer effort put in is captivating enough that it even inspires younger artists to try to reach those achievable heights.
