Children tend to be good protagonists for adventures that don't focus on sensitive topics like war. They can be naive without being idiots. They have a reason to be immature at the beginning so they can learn as the story goes forward, and they can come up with unorthodox ideas that adults would usually avoid. They are rule breakers by nature. Usually, they have to grow up while keeping their inner child.

The fantasy elements are, fundamentally, just the icing on the cake. The world is always magical from the kids perspective (unless the kid if forced to grow up early because of the war, rape, famine etc.), and the show's magical setting only embraces that magic.

I don't think AT was very good to begin with, I think SU is awful, Star vs forces of evil is below average in my opinion and so on. Some shows are good, and some shows are bad.
I agree about the trend, but not with dismissing everything that fallows it.
