Finn's mom, and that scientist lady had all sorts of crazy shit at their disposal, so I'm sure they'd be able to make up something to stop the rainicorns. It also helps that they both have very loose morals, and are only interested in keeping their own race alive, with no regard for everything else around them.

When Rainicorns first attacked mankind, they were vastly less technologically developed.

Now, thousands of years in the future im pretty sure the humans can stomp pretty much anything that tries to harm them in the Land of Ooo.

Keep in mind that one scout robot steamrolled through Candy Kingdom's main defenses and it took Jake, a magic alien/dog, to stop it.

Rainocorns and Dogs both live in the crystal dimension though, and we never see any other hybrids. I think Jake's alien heritage specifically is what let him produce offspring with lady, considering his dad had no problem sewing hybrid offspring throughout the galaxy
