she's got some serious bloodlust she keeps under wraps, she's almost always on the side of authority and/or power, self-identifies almost entirely as a military woman, anger issues, not very concerned with being nice or polite.
As Ms. Marvel she was VERY aggressive. during Reed's Ms. Marvel run she realized she needed to exercise more self-control and started trying to do so. As Captain Marvel, she has a much better handle on herself, even to the point of going out of her way to be nice to people, but it's not something she's good at. she tries to be nice, comes across as cold and overly formal, and that's the best she can do. When pushed you can see her bloodlust come out, for example in the godawful CW2, when Stark finally pushed her too far and she nearly killed him.
I can't speak for other people, but Carol's struggles to control her dark side are why I like her so much.
