S5 and 6 are heavily experimental, especially 6. Naturally, sometimes it works and sometimes it doesn't, but that's for you to decide.
S7 is kinda like S3 in a way that it combines lore, fun and experimental stuff pretty well I think.
After that the show becomes heavily serialised with huge story arcs that most of the time end up less important than they seem, because even with all these arcs the show still has no "huge narrative", it's just about the life of different inhabitants of Ooo. It's not exactly bad, but I think it could've been better. Last season seemingly had a lot of things going on, but when you look at the episodes themselves, you see just how much of it is uptaken by filler. It doesn't help that S8-10 are all so fucking short as well.
Still, there's almost nothing quite like it in the western animation right now, so sure, you can watch it, but try to keep an open mind. The show relies heavily on subverted expectations, for better or for worse.
