The Gems have been around for THOUSANDS of years. They've been around since humanity was still hunting and gathering shit. They're older than cities, older than writing. They've been there as long as human civilization has, essentially.
The humans just probably have a different worldview, the sort where crazy shit can occasionally happen and that's just the way the world is, since shit like that has always been occasionally happening. Sure the Gems have managed to sort of hide their existence, but weird structures and geoformations and occasional happenings must be something the humans have learned to sort of write off as weird natural phenomena, kind of like aurora borealis or something. Or stonehenge, or the Easter island heads, or the giant figures drawn on hillsides etc.
Also Greg mooched off Vidalia when he was younger and jobless. He didn't have Steven then. Once he got a kid he shaped up, got a job, was the sole breadwinner for Steven and the gems, built them a fucking house (a nice house!) so his son wouldn't have to live in a cave or a van, and took care of Steven for the first few years as a single dad.
He's also recently become a millionaire and is very sensible with that money, still living in a van and running his car wash because he likes it, and is still down to Earth.
He does his best for Steven, even if the gem stuff freaks him out and he's legit out of his depth with a lot of the shit that goes down. But still, he tries to support his son as well as he can, shows him unconditional love and is there for him. Greg is a great dad.
