Maturity dpesn't mean "learning violence is isn't the answer" becoming mature means "learning to take responsibility and do what's right whenever you can, no matter what it is" which is what Finn already knew, only before, he was happy to do the right thing. Deciding you don't like violence is actually really immature considering the world Finn lives in. Sure, in OUR world your problems can never be solved with a sword, but in OOO, where the biggest threats are monsrers, demons, evil wizarda, the incarnation of evil/death, and a megalomaniac who wants nothing more than power over a world of people completely subordinate to them, less fighting is quite possibly the worst thing he can do, it's more of a childish rejection of responsibility due to his own personal hangups, which could be done well, reverse development is a great narrative tool, but there are 4 episodes left so it will be left in this state of regression.
It's why AT was the worst show to become what it is now. Finn's flaws were his recklessness, lack of forethought, and selflessness, besides this there wasn't very much room for Finn to become a better person, and even less once ypu realize it was those flaws that made Finn so likeable and entertaining.

Finn has the naive optimism and youthful energy to think he can fight a meteor
Finn is reckless enough to dive into a dungeon alone just for the sake of it
Without Finn being who he is (or was I suppose) there is no show, or at least not much of one
