A real answer:
1. Creative types and artists have always been more likely to be gay, or maybe just more able to be "out" and transgress boundaries since they're already "outside" of society in some ways. When they can, these gay creatives just put themselves (and their fetishes/what gets them off honestly) into their shit.
2. One word: shipping. And appealing to shippers. Or having been a shipper. In Japan too, you see fucktons of yuri and yaoi shit. People have written way too fucking much about what that is, but the simple not so progressive answer is most fans are straight (or mostly straight) and dudes would rather see two chicks and chicks would rather see two dudes. That way, they get rid of the same gender one they're not attracted to and go right to what they are attracted to.
That's why a lot of shit that has yuri or yaoi pandering in Japan or gay guy romance novels or lesbo porn is targeted at men attracted to women (yuri and lesbos) or women attracted to men ("slash" or yaoi shit). It's all about the $$$$$$ and sexual appeal to straight people. With cartoons, of course, it's more like the preteen who might watch but since these are people just entering puberty, well.
Now there are more actual gay people comfortable with wanting shit for themselves but that's not why this all started really.
