More forward speed than downward speed. They also land on the downhill slope, and not on the flat.

Because they fall on a hill so their speed goes from 100km/h to 70km/h or so, not 100 to 0. If they landed on flat ground they'd break their shit

If you watch one of these competitions you should see the side shots of the jumps and in those it's very easy to see how slowly they actually approach the ground as it slopes down under them.

force equals mass times acceleration. acceleration can be viewed as a change in direction. in the case of the ski jumper that change of direction is far less radical than say falling from a building because the ski slope change of direction is much less dramatic then hitting a flat surface like the road.
