I did a lot of stuff on blockbench trying to get my bearings on 3D. Here is the thing, there are several styles and way of approaching voxel, but ultimately is a landscape/scenario thing, you can try to make characters or animals with it but it would never look as good as something like lowpoly, the best way of approaching characters with voxel art is doing some faux lowpoly using the cubes as triangles, is pretty redudant.
For background? Is probably the superior means of building lowpoly scenes, is easy, simple, stylistically and faster then trying to do with normal lowpoly, the end result always looks great and you have greater control over the style by choosing the size of the cubes like you would with pixelart. The problem are the diminishing returns when it comes to performance, an scene like the one you posted would probably more hardware intensive then something stylized by the number of polygons alone, so is not something you can use freely for games that in my opinion is the strongest suit of the style,
