For starters, it doesnt use simple shapes, face has several curves and hair has several line breaks, eye has significant detail even for general standards... even if they are drawn simply, they all have reached a point where they are not applicable for symbolic art

When you stop seeing the "symbolic" part like literal "symbols" but rather "symbolism", you will understand the "simple shapes" are merely a way to achieve symbolic art and even more detailed pieces can be symbolic draws as long as they keep themselves simple enough in concept.
