Focusing on one would probably work better. You may be the type of person the needs to be able to switch things up by working on different projects so it could be good for that.
As far as a or b goes, it depends on the mediums. If the mediums are totally different, like digital painting, sculpture and basket weaving, then you'll probably be taking on too many new things at once. However if they are more similar the methods may help feed off each other. If they are all the same medium but different genres, that could help keep things fresh while not having too many new things to learn. Although that could get a bit repetitive.
