Does anyone else have a problem drawing with freshly sharpened pencils?
I draw well when the pencil is a bit dull and the tip is round but the moment I sharpen it and the tip is pointy, I immediately feel uncomfortable, like I have less control and I make the ugliest sketches.

I think the reason is you're not very confident I. Your work. A dull pencil gives you softer smudged lines that make it easier to imagine the actual picture you're drawing. Letting your eye do the work of finding what you're trying to communicate.

Very similar to chicken scratch sketching. You're not putting the actual line down you're suggesting it.

That said I'm also not confident and often prefer my messy sketches far and away more than finished or clean work. Just something to think about.

sharp points catch on the paper easier and makes smaller, darker lines that can't be masked by thickness. Just about everyone prefers to use a more dull and thicker tool for their sketches for these reasons.

Just use mechanical pencils. Then you get used to doing lines. Better yet ditch graphite and do ink.

try learning to vary your pressure but in the end who cares
what works for you works for you. as long as you're not engraving the paper because you apply too much pressure then you're golden.
