Simple desaturation of all colors is completely wrong. Filling a new layer with black and setting the blending mode to 'Color' tends to be recommended. An alternative method claimed to be more accurate is grayscale conversion or using grayscale proof in photoshop but the resulting values tend to be different from the previous method.
