Overall, there's little contrast on the nose area, thus it's reasonable to simplify it considerably.
The eyes area on the other hand is perhaps one if not the most contrasted area of the body. So it makes sense to detail it more.
Emphasizing that contrast by making the nose negligible, and making the eyes a bit bigger, which as a side effect will make people look younger, and voilà.
