Every show that has tried it - Simpsons, Futurama, South Park, Rick and Morty - has fallen flat on its face by either making wildly outdated references (Rick and Morty pretending that Speed Racer's quirks are common anime tropes) or making bizarrely generalized jokes that don't resonate with anime fans (spiky hair??? LOL!). They're all clearly written by non-anime-watches who are just looking up anime tropes to reference instead of making a faithful parody.
Mock 5 both nails the feel of Speed Racer perfectly and clearly comes from a place of love. There's really no other "anime episode" like it.
