But we could use solar energy. For example we could build huge mirrors that reflect sunlight onto a tank full of salt that will undergo a phase change and absorb a huge amount of heat. We can then store that molten salt and run water through it to create steam to get the energy back when we need to.
It's not very efficient though. But it's doable. But there are even better methods.
