Why does sticking a fork in an electrical outlet kill you? Wouldn't the path of least resistance always be to the negative ground in the outlet? Why would the current ever go through your body?

Not with AC.
You would get the effect you're talking about if you bridged the active line to the protective earth.
Bridging active to neutral will make you part of the circuit to ground and is no different from just jamming a single prong into the active side
