Most science is just heuristics. Nobody knows or may ever know how stuff really looks or works. But as long as the models are sufficient for engineering that doesn't matter as anything that goes beyond that is just, you know, academical.

It depends on what you mean by "lie". The idea of "lies to children" is fairly important if you want to reasonably teach anyone anything in a decent amount of time.
