why do some people claim that super-expensive vodka isn't as good tasting as super-duper-expensive vodka?

i mean, in terms of chemistry, what if i went on a chemistry supply and got ultra pure ethanol and mixed it with ultra pure water? or, if the water is special somehow, just mix it with whatever wonderful spring water i prefer. that would be a lot cheaper than super expensive vodka right? so why is it a thing?
