For one, Star's aim isn't as selfish as Mabel's. She's busy trying to be a good future queen, changing Mewni, and to bring unity among monsters and Mewmen. This brought the worst out of her neglectfulness but I'd give her that she's trying to do something good. Mabel's whole deal, as far as I can remember, is that she wants Dipper to go back with her cause she'll miss him.
Also, Marco actually wants to be Star's squire (for a lack of a better term, servant). He's doing it for himself, not cause he thinks he needs to do it for his sister, denying him of his own desires. Not necessarily what I would've done, but considering his feelings for Star and love of adventuring, it's completely understandable.
Lastly, with about one and a half seasons left, this is probably just a development arc and we'll probably see them be far more balanced by the end of the series.
Haven't binged Gravity Falls in a while, though, so might be missing some stuff.
