They're literal cardboard cutouts where you can insert virtually any personality or interpretation and they'd still be in character. Maybe not to the extent of Mr. Tohham Hatt, but the Louds are out there. It's a consequence of the harem format as you really can't let any of your characters hold anything even remotely resembling a personality.
Take Lincoln for instance. He's the perfect self insert for any lonely neckbeard in search of solace. He's generically nerdy, lame, and so average he's... Just average. The perfect viewpoint character. That explains half of it. The other half is the fascination with watching a show meant for seven year olds then just mutilating it.
Like Shed 17 or Bertha: The True Story, we'll always enjoy watching these cutesy cartoons get turned into rather dark and morbid stories. But this phenomenon works both ways. While we enjoy seeing who the Louds really are, we arguably get more enjoyment out of watching Guts putting that punkass Griffith in his place. Or the Ulricans holding Middenheim from the hordes of chaos.
